Can you do a jumper on a S2K to make it think a printer is there?  Something similar to jumping the meters?

No, there is only 7 wires used by a netplex printer (the protocol used in S2000)
25V, Ground, and the 5 netplex signals.

It's a optional Netplex peripheral, it's not anything that's
required provided you disabled it through the menu settings.

Unlike the mechanical counters...those need a feedback loop to fool the machines' MPU.
