I recently picked up a project Bally 873 EM Nugget Casino slot from Reno.  The machine needs work.  I can't seem to remove the reel bundle from the machine.  Seems like it just stuck in there.  The machine will coin in, and reels slowly spin, but hopper will not pay out.  It needs to be shopped out, but I've never come across one where the reel bundle won't come out...

Any ideas?

Are you referring to the complete reel assembly, and that it does not want to be pulled out?  I had one once that I had a problem like that.. I unlatched both latches but it didn't want to slide forward.  I had to slide a flat blade screw driver under the front of the reel assembly, then I pushed down on the screw driver handle and pried against the reel shelve and it came free.. Once I had it out I sprayed the plug a shelve slide groove with some WD40 and wiped off the excess. After that it came out easy...

If it's jammed, force it... If it breaks it needed to be replaced anyway...

Amachanic has it right.  I once pulled the reel unit out with my hand on the top unit bar.  The reel tins sliced the Sh*t out of my hand, and never did that again.
Pry it gently, but with firmness.  Let it sit a few minutes and pry some more.
When it eventually comes out, be sure to straighten and align the pins of the Beau plugs.
You might even consider using sandpaper on the thicker pins to mellow them out.  Corrosion seems to widen the pins I'm thinking.
A little light lube might not hurt, too on the pins.
LIGHT.
