Are these easily convertable to multiple lines from a single line?  Seems like a lot of extra plugs and wiring...

 no  I don't think so...not even sure if it's possible since the payouts/stops were designed for one line. How would the machine know to pay on more than one line?

the only wiring required would be for displaying the paylines on the door - the wiring is there - would require a light panel and soldering wires to the bulb sockets.  of course you need to change the P1 program - glass etc.
