Currently my ChamII is set up to remain on at all times when plugged in.  Its plugged to the non switched plug 110 plug on the power supply.
Is there a setting that will shut it down, when the machine is powered off, or will I have to rework the 110 plug to go someplace else in.on the power supply?

There's several things you could do Magic but the easiest solution would be is to run the ChamII+ power supply cord
out through the hole to a powerstrip where you could switch it off from outside the machine.
Or stick the powerstrip behind the bill acceptor cashbox and run the plug out the hole to the wall socket.
That way it might be easier for you to turn off whenever you turn off the machine.

The harder way is to get the 3-pin power Molex, attach it to the Mikohn power supply cord and
plug it into the switched power connector in the right side of the topbox.
It's easy to check which one that is:
With the machine turned off, push the leads of your multimeter into pins 1 and 3 of the connector  
and turn on the power switch of the machine -
if your meter shows 115Vac, you will know it's the "switched" supply line.
The #2 pin is the green GND wire.
The other two are black and white.
You can clearly see the 3 wire colors from under the reel tray in the back right of the cabinet.
