Anybody ever seen one of these before or know how they work?

That board is the ASSY NO. 7691180 Rev.A
Those were made in 1995 for trade shows and they're pretty simple to hook up.
You disconnect the coin mechanism harness under the button deck and plug into that.
The other two wires go to the "Bet One Credit" button...
If one has the SP1137 chip installed on the MPU, you could press that "Bet One Credit" all day long
and all the credits accumulate into the "Credits" window glass display.

I believe that it had some of the IC components of both the coin comparator and coin-in boards -
without the security features.

I've always wanted one so I could make more of them!  :91-

Best to leave the bet one alone and use the Change button instead
It also connects to the Molex going to the hopper.
I can tell the wrong molex is plugged into the side of the metal box.
The wire colors should all match up

That's a great thought, but after 15 years do you suppose those IC's are still gonna be available? You might have to go digging in the storage closet of some old electronics repair shops

Il2 optical isolator (4) you only need 3 one is for a 120V circuit that is not even used with the harness that is included I think this could have been used on another platform from IGT.
Bridge rectifier small one is all you need, it feeds one of the IL2
resistors
diodes
capacitors

I have one that while testing it I shorted something, did it two times, 1st time got the board working again, 2nd time I tried to hard to get the IC's out and damaged the traces.
so it sits in the parts bin

There are 3 Molex connectors and a single wire with 2 different size quick connects on it. 1/4" and a smaller one.
The Molex with the most wires plugs into the one on the metal box.
The one with the orange, red, green wires goes to the Molex behind the coin comparator on the door.
The one with fewest wires goes to the hopper harness coming from the mother board  the Molex it plugs into is near the hopper

I would just unplug the input wire from the Change button switch and connect the spade in free play harness to it
That way you can use the bet one to bet credits already on the machine and use the free play only when you want to or need to simulate coin in.
Make sure you unplug the unique wire from the switch, it will only have one wire going to it. and that switch does not have any wires going to the lamp socket.
The common wire for the switches, which is ground anyways, will have 2 wires in the connector


You could add a switch if you wanted just be aware you need to connect the other side to the common terminal of one of the player switches.

When you cash out it will count off credits just like the hopper is paying them, within the limits that the machine is configured for
