Can someone tell me what this chip is? Its right next to the Version chip.  Whats it purpose? Im switching over from a 502a to a 504b and wondering if i should move it over to the new board.

What SB chip are you using? If it's an SB0001000 then the chip you're looking at is an SS chip from the S+ game platform and the SB0001000 makes it work. You can eliminate that chip by aquiring the correct or more current SB chip for your game theme

Those are the ram chips. They go on the new board unless it already has them

As far as that SS chip goes, if you expose it to ultraviolet light with that window uncovered, you're gonna erase it. If you think you might have a use for it, put a sticker or something over that window
