When changing from a short reel glass with the meter next to it, to a long glass with the long display, do you need to change anything besides the display? Are the wires or display driver boards different? If so what do I need to get?? (s-2000 upright 3 reel)

I think you should be okay.
there is a vfd that has the driver built in.
It still uses the same power and netplex wires

If you change to the long display with the built in VFD driver you might need a harness adapter to hook up the original machine harness to the display.

The adapter if needed is a mini to micro plug.

Watch if you decide to change the reel shelf because this causes you to move the cherry switch and door optics and then you will have to change or modify the door locking bar.

So that's the 3 short to 3 long change.  Not sure but believe the cherry switch and optics are also moved on that set up. which would call for the small metal bracket and new locking bar.
