Obviously you would need a main board and power supply but would it take a ton of parts to convert to an S+ or S2000?

I think the labor and wiring involved would make it prohibitive.  It's possible, but you'd mostly be building it from the ground up.  As far as from an S (or even an S+) to an S2000?  It'd be completely from the ground up, and not worth trying.

Cactus Jack built a S2000 from a S+. He was basically able to use the cabinet and handle.
He later changed the S2000 to a GameKing, as he is a poker nut. The game board is escentally the same.
The latter involved completely redrilling the button deck. Not the prettyest of conversions but functional.

There are a select group of collectors who would value a S slot in its orginal form
IMHO you would be better off selling the S and buying a S+ or S2000
