With credits on the machine, you must pay them out in order to get down to zero credits.  The only other option is to do a full RAM clear to clear the memory of the machine and reset it back to its defaults, which will zero out your credits but also lose any settings currently enabled (such as your bill validator).  Generally speaking, it's easier to just run the coins through the hopper until it pays out all the credits.

Once you have zero credits on the machine, you can use the self test button to access configuration menus and adjust your credit and hopper limits to your liking.  Note that you cannot make most of those changes while you still have credits on the machine (the menu screens relating to those settings will simply not appear as you page through the settings).

As far as updating the bill validator, you likely have a DBV-145 or a DBV-200.  The 200 can be updated to accept newer $20 bills, but you will not be able to get an update to accept the new $5 bills, or anything newer that might come out.  Updating the bill validator is a matter of buying a replacement EPROM if your validator head has a socketed EPROM, or sending it to a dealer who can flash the head with the latest available software if your validator head does not have a socketed EPROM.  With the power off, you can remove the validator head from the rest of the assembly and look on its bottom side to determine what kind of memory it uses.

You can put a hopper simulator that will simulate the coins going out. Search the forums there are some plans with ic555 . For the bill vall you can always adapt a newer bill with an interfase that will work with the poker. I use a bill that acxepts all the new ones here in my country and it has usd also.
