Is it as simple as swapping out the 4 EPROMS on the board?

Are MKV and MKV Series 2 games compatible? Is there much difference between MKV and MKV Series 2 hardware wise?

Any hints on where to look for some romsets/someone selling them?

Thanks.

We have a few, but not many...

As far as procedures on swapping games, I'm no help, as we've never played with any Aristo machines. Try Google for a manual, or check the Download section on here. If like any other game I've known, some type of Ram Clear will be needed in order to successfully change games.
