I would like to use this machine without the use of the printer. (It's just not needed) How can I disable the printer all together?

To disable the printer you will need a key chip. The key chip menu for the printer is 7.2.2.
Do a search on 'how to key a machine', it gets a little complicated understanding how to use the panel buttons to navigate through the menus.
Do not use a clear chip (or you will lose all the machine settings) just a key chip and go to 7.2.2 from there you can enable or disable the printer.

A key 31 should do the job, while your at it might as well get a clear 97 you may need one in the future.
Post a WTB on the classified someone should be able to help you with the chips.
